Spiralizethe sweet potatoes and cut corn kernels off the cob. In a large skillet over medium heat, toast the corn until beginning to char. Next add olive oil or a few tablespoons of water and the sweet potato noodles. Cook until sweet potato noodles are visibly softened, about 5 minutes. Be careful not to overcook or they will become mushy. Once softened, place sweet potato noodles and corn in a large bowl and set aside.
