Zoodles with Seasame Ginger Tahini Sauce – raw, vegan, Whole30 approved, Paleo, Keto…. I mean it’s just … delicious and incredibly nutritious. You can easily mix up the tahini for peanut butter for a more “pad thai” taste as well, just use quality peanut butter.
For the zoodles you can either (a) buy them already spiralized, (b) use a spiralizer like this one, or (c) use this handy-dandy julienne peeler. In the photo above I used the spiralizer for the zuchinni noodles and the julienne peeler for the carrot and red bell pepper. I love both tools and they’re both super affordable and easy to use. I have to admit that I have the KitchenAid spiralizer attachment but don’t use it because it’s heavy and not as user-friendly as the one linked above. (Just my opinion).
