For the Seasame Ginger Tahini Sauce
  1. Place garlic and ginger in a mini food processor (I use the Vitamix small blending bowls) and pulse until finely chopped. Add the rest of the ingredients and process until smooth and creamy. If too thick, add a little more water. If you don’t have a mini processor or blender attachment you may whisk everything together in a small bowl, being sure to mince and grate the garlic first. Adjust flavors as desired. Set aside.
For the zoodles
  1. Using a spiralizer or julienne peeler, make the zoodles. Or if you can find them already spiralized feel free to use those too. If making fresh zoodles place spiralized zucchini in a paper towel lined colander for about 5 minutes, squeezing excess water out at the end. I find this gives the zoodles a better consistency. Meanwhile, prep other ingredients. Add everything to a large bowl, drizzle with sauce and toss together.
