Coconut Lime Energy Bites

Energy bites or energy balls.  They’re SUPER easy and equally delicious.  Feel free to swap pecans for almonds or lemon for lime.  Make it your own, you can’t go wrong!


Coconut Lime Energy Bites
Recipe Type: Snack

Total time: 5 mins
Serves: ~20 balls
Ingredients
  • 1 cup almonds
  • 1 cup pitted dates
  • 1/2 cup unsweetened coconut
  • Juice & zest of one lime
Instructions
  1. Add all ingredients to food processor and pulse until sticky dough forms, if mixture is too crumbly add 1 Tbsp of water at a time until you can easily roll into balls. Using your hand roll into 1″ balls, recipe makes approximately 20 balls. Refrigerate or enjoy immediately!
